Basic Kitchari

Kitchari is a staple meals in Ayurveda. It has a light-weight, comfortable consistency that cleanses and nourishes the physique. It’s a combination of

mung beans, rice, seasonal greens, and spices—an entire one-pot meal.

1. In a fine-mesh strainer, rinse the mung beans and rice underneath chilly working water.

2. In a medium glass bowl, place the mung beans and rice and canopy fully with water. Soak for 3 hours and drain.

3. In a medium pot, warmth 1 tbsp ghee over medium-low warmth. Add the mung beans, rice, and cinnamon and sauté for two to three minutes.

4. Add 4 cups boiling water to the pot. Cowl and simmer for about 45 minutes till the beans and rice are tender.

5. In a saucepan, warmth the remaining ghee over medium-low warmth. Sauté mustard seeds for two to three minutes, till they start to pop. Add ginger, cumin seeds, and fennel seeds and sauté for one more 1 to 2 minutes. Add the turmeric, coriander, and salt to style.

6. Stir the spices into the pot. Add extra water as wanted for a creamy consistency and texture.

7. Garnish with the cilantro, coconut, and lime.
